| Physical and Chemical Properties | Ascorbate oxidase (AO), short for ASO, belongs to ceruloplasmin family, molecular weight of 140kD, composed of two identical subunits (70kD), can be ascorbic acid oxidation into dehydroascorbic acid, at the same time, with oxygen to generate water, coupled with other redox reactions, it plays a role of terminal oxidase, which can catalyze the oxidation of ascorbic acid, and has anti-aging effect, it plays an important role in the metabolism of substances in plants. AO in Cucurbitaceae plants (cucumber, pumpkin, gourd, etc.) in the content is higher, so the separation and purification of the enzyme is mainly extracted from these plants. |

| copper-containing enzyme | ascorbate oxidase is a copper-containing enzyme found in melons, seeds, grains, fruits and vegetables. It can oxidize ascorbic acid to produce water and dehydroascorbic acid. Compared with non-enzymatic oxidation, ascorbate oxidase produces water, while the former produces hydrogen peroxide. The existence of ascorbate oxidase is only a "defense system" of the plant itself. So far, there is no scientific evidence that it can oxidize vitamin C in food. |
